Nice Day Off!
Well, Jason and I were off work today. YAY! He was way ahead on hours, because of all the snow removal he did early in the week, so Dad told him to take the day and get some rest, and gave us more time to work on projects without the kids around. I chose to stay home too, so I could help. We are really making progress in our projects. We spent all day organizing, purging, rearranging, fixing, and whatever else needed done, and we still have more to do, but at least we feel like we are getting somewhere!
We had to take a few breaks though -- since it has been so cold here, we have driven the kids to and from school. And yes, this morning's -10 degrees was even too cold for us to make them walk 2 blocks. We also had to take Shelby to the immunization clinic... She was really sad, but only for about a second or two. The nurses gave her some stickers, and a band-aid with a smiley face on it, and she was up and running again in no time. We took her back to school right away, much to her chagrin.
The girls went to the middle school boys' basketball game tonight, too. (That always helps with the healing process from getting a flu shot...) We don't normally make it to all the games, but the girls like to go to as many as they can, and Haley has a pass (included with her participation fee for volleyball earlier in the year). So a couple of bucks to get Shelby in goes a long ways to keep them smiling. They love to go and get sweet tart suckers and gatorade drinks, and if that makes them happy, then more power to 'em. Right?!?!?
OK. My hubby has been placing all his Ford memorabilia in the basement bedroom, and he's started talking gearhead...
We are now up to discussing whether or not a 1970ish Pinto and a 1970ish Comet look like the same car. I know that the Mercury Bobcat and the Ford Pinto were the same car. And I know that Mavericks and Comets were the same car. But I still think they look so much alike that there is really no difference. You still feel when you are sitting in the car that you are draggin your butt on the highway... HA HA HA!
Maybe the basement remodel/facelift wasn't a good idea? I am hoping that there will not be a conversation between us that would go something like this: "DO NOT cross THIS line!"

Ingredients
Serves 6
2 ears corn, husks and silk removed
3 corn tortillas, cut into 16 wedges each
3/4 cup nonfat plain yogurt
2 limes
1/3 cup fresh cilantro leaves
1 1/2 tablespoons finely chopped and seeded jalapeno pepper
1/2 teaspoon coarse salt
1 pound ground turkey
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 pound iceberg lettuce, torn into 2-inch pieces (about 3 cups)
1 cup canned black beans, drained and rinsed
2 plum tomatoes, cut into 1/2-inch-thick wedges (about 1 cup)
1/2 red onion, peeled and cut into 1/4-inch-thick wedges (about 1 cup)
1 small mango, peeled, seeded, and cut into 1/4-inch-thick wedges (about 1 1/2 cups)
Directions
Bring a large saucepan of water to a boil over high heat. Add corn, and reduce heat to medium; simmer until kernels are tender, 5 to 10 minutes. Transfer corn to a plate; let cool. Slice kernels off cobs; place in a small bowl, and set aside (you should have about 1 1/4 cups).
Preheat oven to 350 degrees. Spread tortilla wedges in a single layer on a rimmed baking sheet; bake until crisp, turning once, about 10 minutes. Remove from oven; let cool, and set aside.
Make the dressing: In a medium bowl, whisk together yogurt, juice from 1 lime, cilantro, jalapeno, and salt. Set aside.
In a medium nonstick skillet, brown turkey over medium heat, stirring frequently, until no longer pink, about 7 minutes. Stir in chili powder, cumin, and juice from remaining lime.
Transfer mixture to a large serving bowl. Add lettuce, beans, tomatoes, onion, mango, and reserved corn and tortillas. Toss to combine well. Drizzle with yogurt dressing; serve immediately.
